Yogurt Cupcakes
Since we had to attend two Christmas party over the weekend I decided to make some yogurt cake and also for the very first time use my Wilton decoration kit that I bought over the summer. Sorry I should say tried to use the decoration kit.
Yogurt Cake
INGREDIENTS
1/2 cup butter, softened
1 cup brown sugar (I used 1/4 C of white and 1/4 C of brown sugar)
1 teaspoon vanilla extract
1 egg
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1 cup plain yogurt (I used 11/2C of peach yogurt)
DIRECTIONS
1. Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 9 inch Bundt pan.
2. In a large bowl, cream together the butter, brown sugar and vanilla until light and fluffy. Beat in the egg until smooth. Combine the flour, baking soda, and baking powder; stir into the batter alternately with the yogurt. Spread the batter into the prepared pan.
3. Bake for 50 minutes in the preheated oven, until a knife inserted into the crown comes out clean.
p/s: I changed this recipe because I didn't want my cupcakes to be too sweet and I was going to put icing on top because my icing was not stiff enough it didn't look pretty :(
We attended two Christmas party has weekend. Saturday was FIL's side and Sunday was MIL's side and therefore I made a batch to take over for both days because I don't want any left overs but yet we still have. We (MIL, FIL, Hubby etc) talked about not getting presents for each other this year so I am not stress about any presents at all this year *yippie* but I decided I'll just bake some stuff as a present and since BIL like the Caramel Apple Bread I told hubby that I'll make that for him as a Christmas present. I haven't decided what I'll make for the in laws. I am thinking of making a Cinnamon raisin bread but have not decided still.
Hubby's cousin..She's 4 years old and she's adorable..Elisa was wearing her jeans and sweater but when I went down the basement to look for her she was just sitting prettily on the couch wearing her snow white dress.

Time Flies
We haven't even set up our Christmas tree..I think we are just going to skip the tree this year. Our first year in our new home we skipped the tree and we decided to put one up last year but this year with Stanley still being so hyper we are not sure if we should put the tree up moreover we are skipping presents this year therefore there won't be any present under the tress after all so what is the point of a tree?We'll see technically we still have some time to put up the tree for a couple of days though and it should be down then.

Stanley is sad...
Anyway last weekend we went up to the cabin. On our way up there Stanley was so whiny sitting behind because he wanted to come up front with us finally I gave in and let him sit on my lap his daddy said "look who's the boss" but his daddy was worst than me. Stanley was sitting behind and he pushed his way on to daddy's lap while he was driving and sat on his lap. His daddy just let me do that...I was like I guess I know who's the boss too..his daddy purposely stop so that Stanley can go out and stretch and run for a while because he was whining..
When we were in the cabin, he was just with his grandpa when ever he could. Grandpa would sit and read a book and he would jump on the couch and sit next to him, his grandpa took a nap on the couch Stanley jumped on the couch and slept with grandpa and his grandpa actually moved one of his leg to make room so Stanley can nap with him together, Saturday night grandpa was tired and fell asleep on the recliner; Stanley was sleeping on him again. Sunday morning his grandpa took him out for a walk before we even got out of bed..*shake head*..See I'm not the only one that spoils him rotten. Hubby and his dad spoils him too especially his dad.

Caramel Rolls
To safe me the hassle I just dump everything in my bread machine to mix the flour up.
It rose so much that it opened up my bread machine cover
Cut up to be put in open
Finish product with caramel icing..yummy...
2 cups warm water (not hot) -I used Milk
2 (1/4 ounce) packages yeast (2 T bulk)
1/2 cup sugar
2 teaspoons salt
4 tablespoons butter (let sit out until soft)
1 egg
6 1/2 cups flour
cinnamon-sugar mixture
Topping
1 1/2 cups brown sugar
3/4 cup butter
3 tablespoons water
Mix water and yeast and wait 5 minutes.
Stir in sugar, salt and 2 cups of flour.
Add egg and butter and mix.
Stir in rest of flour by hand, if dough is still sticky add just enough to make it not sticky anymore.
Let raise until dough is double in size.
Sprinkle flour on surface and roll dough out until is approx 18 X 12 inches.
Spread a very thin layer of soft butter on dough and sprinkle cinnamon/sugar mixture on it.
Roll dough from the long side, it should look like a log.
Cut into 1 inch pieces. (I used thread to cut it to eliminate the mess of using a knife)
Should be 18 pieces.
Place brown sugar and butter into microwave dish and heat until butter is just melted; stir well.
Stir in 3 T water.
Divide mixture into 3 pans (8-inch cake pans).
Place 6 pieces in each pan.
Let raise for about 45 minutes.
Bake for 20 minutes in a 325°F oven.
When you take out of oven, turn each pan of rolls over on a plate, otherwise you will have a hard time getting them out when they cool.
If you can, let them cool slightly and enjoy them when they are still warm.
I love both Cinnamon an Caramel rolls..Caramel rolls is much sweater than Cinnamon once I think and if my mum would see the amount of sugar in the Caramel rolls I think she would faint.LOL Hubby said I'm trying to kill him because I make all these rolls and he really loves it therefore he's going to be fatter and die sooner..opss...I guess that's why I try and distribute food that I bake so that he don't get to eat so much of it..
Stanley’s Second Class
He was a little better than his first class in terms of not so excited but never the less he was still excited seeing other people/dogs there. The teacher suggested that we take him out more to the pet stores to walk and meet other people or animals. I told the teacher that hubby dare not take him to the stores in case he goes wild/too excited to see other people and animals and she said that we should do it often but not keep him sheltered. After class we took him to petco and I think my baby did pretty well. This class I took two videos of him it was just funny to see him, hubby and the other dogs just excited/scared being there.
Next class is going to be interesting. The teacher said that we are going to take their leash off and do the "come" command. I can imagine the chaos..

Frustrated
So far there is no sign of giving up yet but just frustrated. Mummy Shern thank you thank you for helping me and I'm sure there will be more questions on the way because I still haven't been able to figure it out. Thank you for your patience and guidance too...*hugz* let's hope it works sooon or else I'll probably give up..

1 (1/4 ounce) package dry yeast
1 cup warm milk
1/2 cup granulated sugar
1/3 cup margarine
1 teaspoon salt
2 eggs
4 cups flour
FILLING
1 cup packed brown sugar
2 1/2 tablespoons cinnamon
1/3 cup margarine, softened
ICING
8 tablespoons margarine
1 1/2 cups powdered sugar
1/4 cup cream cheese
1/2 teaspoon vanilla
1/8 teaspoon salt
Knead the dough into a large ball, using your hands dusted lightly with flour.
Put in a bowl, cover and let rise in a warm place about 1 hour or until the dough has doubled in size.
Roll the dough out on a lightly floured surface, until it is approx 21 inches long by 16 inches wide. It should be approx 1/4 thick.
Preheat oven to 400 degrees.
To make filling, combine the brown sugar and cinnamon in a bowl.
Spread the softened margarine over the surface of the dough, then sprinkle the brown sugar and cinnamon evenly over the surface.
Working carefully, from the long edge, roll the dough down to the bottom edge.
Cut the dough into 1 3/4 inch slices, and place in a lightly greased baking pan.
Bake for 10 minutes or until light golden brown.
While the rolls are baking combine the icing ingredients.
Beat well with an electric mixer until fluffy.
When the rolls are done, spread generously with icing.
