Chicken Mushroom Rice/Yau Mei Fan

There are days when I have trouble thinking what to cook for dinner. I run out of ideas sometimes but a lot of the time I want to cook something yummy and hubby would actually eat. Hubby wanted to have pizza Monday night while I didn't want to eat that. So I decided to just cook something simple for myself because I'm lazy :p.

Chicken Mushroom Rice

Ingredients
Handful of chinese mushroom (Washed and soaked with a tsp of sugar for at least 4 hrs)
Chicken pieces
Rice
Chinese Sausage - optional
Salted fish-optional
1 TBSP Oyster Sauce
2 TSP Dark Soy Sauce
1 TBSP of soy sauce
1 TSP of chicken stock powder

Method
1. Wash rice and drain. Add enough water from the mushrooms.
2. Put chicken pieces, Chinese sausage, salted fish and mushroom on rice.
3. Pour seasoning over.
4. Steam until rice and meat cooked.

* I'm lazy to cook the rice first so I just dump everything to cook. You can cook the rice in the rice cooker. Stir fry the chicken with the seasoning and put in the the rice cooker when the water from the rice dries.
**Some use claypot to cook this dish too. This dish is actually similar to clay pot chicken rice.

I omitted the salted fish because I didn't have any and I skipped the Chinese Sausage too just in case hubby wanted some and he don't care for Chinese Sausage. Another simple low budget meal. I froze some left over so I can just heat it up when I'm by myself.
